Our Culinary Journey

From a small food court vision to becoming Canada's creative hub for healthy cooking education

2019

The Beginning at Bramalea

What started as a modest food court venture at Bramalea City Centre quickly evolved into something much bigger. We noticed people weren't just hungry for good food – they were curious about how to create it themselves, especially healthier versions of their favorites.

  • Opened our first location in the upper level food court
  • Began informal cooking conversations with customers
  • Discovered community interest in healthy cooking techniques
  • Started documenting traditional recipes with modern twists

Growing Beyond Food Service

The pandemic changed everything, but it also opened doors. We realized our real passion wasn't just serving meals – it was sharing knowledge about nutrition, cooking methods, and the creative process behind healthy eating. This shift marked our transformation from restaurant to educational platform.

  • Launched our first educational content series
  • Developed partnerships with local health professionals
  • Created comprehensive guides on cooking method alternatives
  • Established our digital presence as Toujours Mikes

Educational Excellence Recognition

Last year brought validation that we were on the right path. Our approach to combining creativity with practical health education gained recognition across Ontario's culinary education community. We started receiving requests from other food service businesses wanting to learn our methods.

  • Reached over 10,000 people through educational content
  • Developed signature workshops on oil-free cooking techniques
  • Collaborated with nutritionists on evidence-based content
  • Established mentorship relationships with culinary students

Looking Toward 2026

Our vision extends far beyond what we've built so far. We're planning comprehensive learning programs that will launch in late 2025, designed for anyone who wants to understand the science and art behind healthy cooking. These aren't just recipe collections – they're deep explorations of how different cooking methods affect nutrition, flavor, and creativity.

Evidence-Based Learning

Every technique we teach is backed by nutritional research and tested in real-world applications. We work with food scientists to ensure accuracy.

Creative Problem Solving

Healthy cooking requires innovation. We focus on developing creative thinking skills that help people adapt recipes to their specific needs and preferences.

Community Connection

Learning happens best in community. Our programs emphasize peer learning, mentorship, and ongoing support networks that extend beyond formal instruction.
